Summer Fun – Red (Strawberry), White (Coconut) and Blue (Blueberries) Popsicles!

The 4th of July brings back childhood memories of fireworks, backyard BBQs-and popsicles. Growing up, come summer time I loved getting my hands on a tasty Popsicle.

Now I can relive those magical childhood memories – this time with delicious gluten free popsicles.

To celebrate the 4th of July this weekend, I made red, white and blue Popsicles. These are a breeze to make, requiring only an extra few minutes; you just have to wait for each layer to set. Enjoying special, colorful popsicles for July 4this well worth the little bit of extra effort

Gluten-free Red, White & Blue Popsicles

Ingredients: Red Layer
• Simple syrup (4 Tablespoon of sugar + 1 Tablespoon warm water)
• Strawberry (3 oz.)
• Cooked Beet (2 oz.)
• Banana (5 oz.)

Ingredients: White Layer
• Simple syrup (4 Tablespoon of sugar + 1 Tablespoon warm water)
• 1 cup of coconut milk
• Banana (5 oz.)

Ingredients: Blue Layer
• 1 cup of blueberries
• 1 cup of coconut milk
• 1 Tablespoon of cornstarch
• 2 Tablespoon of sugar
• 2 drop of blue food color

Cooking Method
Step 1: Make Red layer
− Blend all red layers’ ingredients together
− Fill-up 1/3 of the Popsicle molds
− Put in freezer until the red layer is set (2-4 hrs.)

Step 2: Make White layer
− Blend all white layer’s ingredients together
− Fill-up the 1/3 of the Popsicle molds
− Put in freezer until the white layer is set (2-4 hrs.)

Step 3: Make Blue layer
–  Heat up coconut milk, then
–  Add sugar and cornstarch, stir until the liquid thicken about 2-3 minutes
–  Add 2 drops of blue food color, mix it well
–  Add blueberries to the Popsicle molds
–  Then add milk mixture and fill up the Popsicle mold
–  Put in freezer until the final layer is set (2-4 hrs.)

Then, sit back and enjoy with your family or friends. That’s what this holiday is all about.
