How to Make “Simply Delicious” Lettuce Wraps  (Gluten Free)

When I was growing up in Hong Kong, the traditional lettuce wrap was a kind of delicacy. The lettuce was cut perfectly on the top and looked like little bowls; for stuffing, they typically used duck meat. Only up-scale restaurants served lettuce wraps as appetizers.

Zoom ahead to today and it’s a different picture; the food culture has evolved. Lettuce wraps are everywhere and used for a variety of dishes, like fried rice or almost any stir-fried dishes.

Here’s my hybrid version of lettuce wraps. I cooked this dish for years and my kids loved it; it’s fun and you can make it your own way, and enjoy as many as you want. Sometimes a simple dish is the best.

Here is my recipe for Lettuce Wraps (gluten free).


- 1 head of lettuce

- 3 tbsp. of canola oil

- 1 oz. of dry shrimp (soaked)

- 4 dry black mushroom (soaked and diced)

- 5 oz. of gluten free Chinese sausage (optional)

- 1 clove of garlic, smashed

- 10 oz. of chicken (diced)

- 1/8 tsp. of salt

- 1 tsp. of gluten free soy sauce

- 1 tsp. of cornstarch (potato starch)

- 1/4 tsp. of sugar

Step 1
- Wash lettuce and trim off the bottom part. Cut lettuce into half and slowly pull of the leaves from the center. Arrange nicely on a serving dish.

Step 2
- Dice black mushroom, dry shrimp and gluten free Chinese sausage (optional). (Gluten free Chinese sausages are very hard to find. I am very lucky-a friend of mine makes them for me). Dice chicken and marinate with salt, gluten free soy sauce, cornstarch and sugar.

Step 3
- Heat 1 tbsp. of oil in a pan, add garlic and then chicken, stir-fry chicken for 3-4 minutes or until the chicken is cooked. Put aside.

Step 4
- Heat 2 tbsp. of oil in a wok, then add dry shrimp, diced mushroom and Chinese sausage, and stir-fry for 2-3 minutes. Add cooked chicken and sauce and mix well.

Step 5 – Serving. Take a lettuce leaf; add ½ tsp of Hoisin sauce* (I use Wok Mei Hoisin sauce, gluten free.). Add 1-2 tbsp. of stuffing.
