Gluten Free Chocolate Oatmeal Moon Pies: Out of this World Delicious

How can you not love Moon Pies? For those of you who don’t know, a Moon Pie “… consists of two round cookies, with marshmallow filling in the center, dipped in a flavored coating..” (Wikipedia) Flavors include chocolate, banana, vanilla and strawberry. Their popularity started in the South.

They’re delicious, and I’ve been missing Moon Pies for years. I’ve had a recipe for several years (can’t remember the origin) and used to make them. But it’s been awhile so last week I decided make a batch of the cookies. Oh, they’re delicious.

Of course they disappeared in a few days. Trust me-you’ll see them vanish just as quickly when you make them for your family and friends.

Here is recipe for Chocolate Oatmeal Moon Pies (gluten free).

Ingredients: (about 36 cookies)


- 1.2 cups gluten free flour (I used Bob’s Red Mill)

- ¾ tsp. baking powder

- ½ tsp. baking soda

- ½ tsp. kosher salt

- 2 cups old-fashioned oats (gluten-free)

- 1 cup dried cherries, chopped

- ¾ cup semisweet chocolate (chocolate chips)

- ¾ cup unsalted butter

-1 ½ cup dark brown sugar

1 large egg

1 tsp. vanilla extract

2  7-oz jar marshmallow cream

Chocolate Sauce

- ½ cup semisweet chocolate

- 1 Tbsp of honey

- ½ cup heavy cream

Step 1 
- Preheat over at 350°.  In a large bowl, combine gluten-free flour, baking powder, baking soda, kosher salt together, then add oats, cherries and chocolate.

Step 2 
- Using an electric mixer, beat butter (room temp.) with sugar until smooth, about 2 minutes. Add egg, vanilla extra and mix well. With the machine running on low speed, add flour mixture and beat to blend.

Step 3 
- Scoop cookie dough on baking sheets. Bake for 18-20 minutes, until cookies are done. Let cookies cool on the baking sheets.

Step 4
 - Spread 1 Tbsp marshmallow crème on the bottom of 18 cookies. Sandwich with remaining cookies.

Step 5  – Put heavy cream in a small saucepan, bring to boil. Put chocolate and honey in a bowl and slowly pour hot cream over them, stir until smooth. Drizzle over sandwich cookies.
