Gluten-Free Chicken Waffles

Miss Chicken waffles for awhile. So yesterday, I decided to make them again in gluten-free. I had this GF fried chicken recipe for a long time and want to try it.

Ingredients:
Gluten-free waffle mix about 2 cups
2 pounds bone-in skin-on chicken
1/2 cup buttermilk
1/2 cup plain yogurt

GF flour and herb Mix:
1 cups Gluten-Free all purpose flour (I used Bob’s Red Mill)
1/2 teaspoon black pepper
1 teaspoons kosher salt
1/2 teaspoon smoked Spanish paprika
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1/4 teaspoon dried parsley
1/8 teaspoon ground cumin
1/8 teaspoon ground cinnamon
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
1/8 teaspoon chili powder
1 tablespoons sugar

Dijon Cream Sauce:
1 cups heavy cream
½ teaspoon finely chopped fresh thyme leaves
1 tablespoon Dijon mustard
Pinch kosher salt

Step 1:
− Marinate chicken with buttermilk and yogurt for several hours (or overnight)

Step 2:
− Put all seasoning, herbs into all-purpose GF flour. Mix well.
− Take chicken out from the yogurt mix and coat with the flour mix.
− Allow the coated chicken to sit at the room temperature for about 30 minutes to form a thick paste on the chicken.

Step 3:
− Make waffles mix according to the box instruction
- For me, 1 cup of all purpose bake mix, 1 egg, 1/5 cup water, 1 tablespoon oil
Heat up waffle iron. Make about 6 big waffles

Step 4:
− Heat up oil and wait till oil heat up to 350°F
− Deep fry chicken for about 8-10 minutes, until internal temperature reaches to 165°F

Step 5:
− Mix all ingredients on Dijon cream sauce

Serve fried chicken, gluten-free waffles with Dijon cream sauce and maple syrup
