Gluten-Free Bread that will Melt in Your Mouth

You’d think after 8 years of being gluten free, I’d have mastered the art of baking GF bread. As I mentioned in my last post, I’ve been baking gluten-free cakes, cup cakes and pies successfully the last few years; it comes naturally to me with all my cooking experience. But gluten-free bread is another matter. I’ve tried so many recipes, using bread machines or just baking them. I’ve tried dozens of so-called “Best” gluten-free bread recipes online but most came up short. Most of these “experiments” were barely edible and I ended up throwing away the loaf.
I refused to give up, however, and I’m happy to say my persistence may have finally paid off.
Last month, I found this recipe from Youtube and decided to give it a try. OMG, this one is delicious. I’ve made it several times already, and can’t get enough of it.
Now I wake up in the morning craving to eat a piece of my gluten-free bread immediately. It’s super tasty and easy to make, thanks to Jessica from Poisonbrownie.com.

Makes 2 loafs of bread, 4”x 9”x 4” loaf Pan
- Sugar 65g (2.35 oz) (1/3 cup)
- Warm Water 165g (5.9 oz). 30 seconds on Microwave. Temp: 135F
- Milk 280 g (10 oz) (1.25 cup)
- Oil 80g (2.8 oz)
- Guar Gum 2 teaspoon (Xanthan Gum 1.5 tsp)
- Egg – 2 large eggs
- Yeast 9g (1 Pack)
- Flaxseed meal 40g (1.4 oz)
- White rice flour 430g (15.2 oz)
- Tapioca flour 180g (6.35 oz)
- Salt 17g (0.5 oz)
Step 1 - Use a large food processer. Mix the first 2 items on ingredients #1 together. Then add milk, oil, guar gum, egg and yeast. Turn on the food processor and mix well (few minutes). Wait and let the mixture rest for 15 minutes.
Step 2 - Measure and put all dry ingredients together in a large bowl and mix them together. Then grease the 2 loaf pans.
Step 3 - After 15 minutes of resting on the ingredients #1, then add the dry ingredients to the food process. Mix them all together, and then put the mixture into the loaf pans (2/3). Cover loaf pans with tin foil, then let the dough rest for 45 minutes.
Step 4 - Preheat over to 350F. Put loafs into the oven and bake 40-45 minutes.
Step 5 - Let the bread cool as much as possible before slide.
