Super Creamy Gluten Free Banana Cream Pie

Banana Cream Pie is my daughter’s favorite, hands down. I haven’t made one since I went on a gluten free diet years ago, but after she requested it one day I thought “Why not?”

I found the #gluten free pie crust at Wholefoods, then started planning to make one for our weekly special family dinner. It wasn’t hard, and the result was delicious.

Gluten Free Banana Cream Pie

Ingredients:
− 1 gluten free pie crust from Whole Food (or you can make your own)
− 5 ripe bananas
− 2 cups milk
− 3/4 cup heavy cream
− 1/2 cup sugar
− 4 tbsp. cornstarch
− 1/4 tsp. salt
− 5 large egg yolks
− 1 tsp. vanilla extract
− 2 kiwis
− 1/2 cups of blue berry

Step 1:
− Preheat oven to 375°
− Cover pie crust with baking paper, fill evenly with baking beads or uncooked beans
− Bake 15-20 minutes until crust is golden
− Remove paper and bead and cool slightly

Step 2: Make filling
− Bring milk and cream to simmer
− Whisk sugar, cornstarch, and salt in a large mixing bowl; add egg yolks and vanilla extract, whisk until smooth. Gradually add milk mixture.
− Return mixture to saucepan and whisk over medium-low heat until custard thickens and boils, about 6 minutes
− Transfer custard to a bowl and cool completely

Step 3:Assembly
− Spread 1/2 cup custard cream evenly over bottom of the pie crust
− Slice bananas into 1/4″ thick, layer half of the bananas over custard
− Top with 1 cup of custard, arrange remaining bananas over
− Top bananas with remaining custard
− Arrange your favorite fruit on top, like berries, kiwi etc.
