Finger licking Good: Gluten-Free Deep Fried Calamari

Calamari is one of my favorite dishes, and has been for years. We used to order it as an appetizer or over a salad. Of course most restaurants serving calamari are deep frying it with flour. That meant no treat for me for several years with at seafood restaurants (you know the story).

Recently however I thought my long wait was over. Turns out one of our favorite seafood restaurants (“Fish Hopper”  of Monterey, CA) now has a gluten-free menu! They have gluten-free calamari on the menu!  I was so excited, and of course, I ordered it…thinking they will use gluten-free flour mix and deep-fried the calamari.

Oops, not so fast. Turns out the calamari was not deep-fried; they were stir fried with some sauce and the calamari was over cooked. Oh, I was disappointed. Not very tasty or chewy!

So what’s a woman to do? I went home and whipped up my own recipe.

Here’s my recipe for deep fried calamari.

Ingredients:

1 lb. calamari (with or without tentacles)
1 cup of milk
1 egg
1 cup of cornstarch
1 tsp of Szechuan pepper-salt
1/8 tsp of five spices
Oil for deep fry

Sauce

1 tsp. brown sugar
1 tsp. soy sauce
1/2 tsp. sweet chili sauce  (optional)
1 tsp. oyster sauce or fish sauce
2.5 tablespoons canola oil

Cooking Method

Step 1
- Remove the squid’s intestines. Wash and drain the squid. Cut it into strips and place them in a bowl. Or you can buy the calamari that has already been cut.

Step 2
-  In a separate bowl combine milk and egg together. Put the calamari in the milk mixture and place in the refrigerator for 15 minutes or more.

Step 3
-  In a shallow bowl, combine cornstarch, Szechuan pepper-salt and five spices, mix well.

Step 4
-  Heat up oil for deep fry. Toss calamari in the cornstarch mixture to coat and deep fry calamari for 2-3 minutes until golden brown. Serve with gluten-free cocktail sauce.
