Delicious Gluten-free Apple Berry Crisp

I love Fall with all the beautiful foliage and change of seasons- and all the apples. It’s a great time of the year for apples, with the seasonal harvesting. I picked up bags of Fuji apples at the local Farmers Market last weekend, and they were wonderful.

I already knew what I wanted to do- create a delicious dessert I’ve been thinking about since our days in Portland, OR: apple berry crisp. My husband used to brag about the “amazing” berry crisp desserts at a German restaurant in Portland called Gustav’s. Unfortunately they weren’t gluten free so I couldn’t enjoy them. So I started making my own since then. Everyone has a food they crave the most since going gluten free. This one ranks up there with banana cream pie for me.

Last week I baked the berry crisp at our Thursday family dinner, after serving our sweet and sour chicken as an entree.  It was a huge hit. I added a scoop of ice cream, and you’d think they had never eaten a mouth-watering, tasty dessert before! It really was delicious.

As a side note, I used organic Fuji apples. But you have other options for baking as we move into October, like Cameo apples, which are also sweet and crisp, or Ida Red and Granny Smith apples, which start ripening in mid October.

Here’s the recipe:

Ingredients
3 organic apples
8 ounces mixed berries
1 tablespoons gluten-free corn starch

½ cup + 1 tablespoon brown sugar
1 teaspoon ground cinnamon
½ cup gluten-free old-fashioned oats
½ cup gluten-free flour
½ cup chopped pecans
5 tablespoons butter (chilled)

Step 1:
• Peel and slice apple
• Put mixed berries and corn starch in a small bowl and mix well. Let berries stand for 20 minutes, toss occasionally

Step 2:
• Preheat oven at 400°
• Put brown sugar, gluten-free flour, oats and pecan into a bowl
• Cut chilled butter into small cubes, use fingers to mix butter with the flour mix

Step 3:
• Arrange apple slices on 4 ramekins, sprinkle 1 tablespoon brown sugar and ½ teaspoon on top of the apple slices
• Divide mix berries into 4 parts; add mixed berries on each ramekins
• Top with flour mixture

Step 4:
• Put ramekins and bake 10 minutes at 425°
• Turn oven temperature down to 350°, then bake another 20-25 minutes
• Serve with your favorite ice cream
