Gluten-Free Chocolate Ice Cream Cake

To celebrate St. Patrick’s Day, I made this Gluten-Free Chocolate Ice Cream Cake for dinner. And of course, I will demand that everyone wear green; even the non-Irish.
Love to share my recipe with you: Chocolate Ice Cream Cake (gluten-free).
Ingredients for cake: 1 – 9” cake
2 cups gluten-free all purpose baking flour
1 cup sugar
1/4 cup cocoa powder
1-teaspoon xanthan gum
1-teaspoon baking powder
3/4 teaspoons baking soda
1/8-teaspoon fine sea salt
2 eggs, beaten
1/4 cup coconut oil
1/2 tablespoon vanilla extract
1 cups milk (or non-dairy milk)
1.5 Qtrs. of Chocolate Mint Ice Cream
Ingredients For the caramel
1⁄2 cup coconut oil
3/4 cup brown sugar
1⁄2 cup coconut cream
Step 1 – Preheat oven to 350 degrees F (175 degrees C). Spray 1 9-inch cake pans with cooking spray.
Step 2 – Combine flour, sugar, cocoa powder, baking powder, baking soda, xanthan gum and sea salt in a mixed bowl; stir in coconut oil until mixed. Gradually add eggs, milk and vanilla extract; stir until smooth. Spoon batter into the prepared cake pan and bake for about 30- 35 minutes. Cool in the pan for 20 minutes before removing cake and place on a serving plate.
- Take ice-cream out from freezer and leave it in room-temperature for about 15-20 minutes, until the ice-cream is soft enough to work with.
Slide chocolate cake horizontally into 2 pieces. Spread the soften ice cream on the bottom layer and carefully put the top layer on top of the ice cream.
Step 4 – Mix the brown sugar, coconut cream, coconut oil and salt in a saucepan over medium-low heat. Cook while whisking gently for 5 to 7 minutes, until it gets thicker. Add the vanilla and cook another minute to thicken further. Turn off the heat, cool slightly and pour the sauce over the cake. Freeze for an hour before serving.
