Chicken Fried Rice- Gluten-Free Chinese Food!

When many people think of Chinese food, the first thing that comes to mind is fried rice. It’s a light, tasty dish everyone seems to like. And of course rice is gluten free.
Secondly, it’s a versatile, forgiving dish; you can use almost use any meat (cooked) or vegetable, with some basic ingredients include eggs and onion. You will never have to toss out leftover rice because it can always be used with any variety of vegetable to add appealing color and texture.


- 5 ounces of raw chicken, diced
- 1.5 teaspoon gluten-free soy sauce
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1 teaspoon of rice wine
- 1 teaspoon of oil
- 1 clove of garlic (crushed and chopped)

Fried Rice

Ingredients: (Serves 3)

- 2 cups of water
- 4 ounces green beans, cut into 1/2-inch pieces
- 2 tablespoon of oil
- 1/2 onion, diced
- 1/2 yellow pepper, diced
- 1/2 red pepper, diced
- 2 cups of cooked rice (about 10 ounces)
- 2 eggs
- 1 teaspoon of oil
- 1 teaspoon of soy sauce
- ¾ teaspoon of salt

Step 1 
- Dice chicken and put it in a bowl, add gluten-free soy sauce, salt, black pepper, rice wine and marinade for few minutes
Step 2 
-  Dice onion, red pepper and yellow pepper. Cut green beans into 1/2″ pieces
Step 3 –  In a small pot, heat the water to boiling and add green beans. Cook for 2 minutes. Drain and set aside.
Step 4 – In a sauce pan, heat up oil, and add garlic and chicken. Sauté chicken for about 2-3 minutes
Step 5 – In a wok, heat up 2 Tbsp of cooking oil, add onion; sauté for 1 minute. Add red and yellow pepper; sauté for an additional minute.
Add rice, mix well and cook 2-3 minutes until heat through. Push rice and vegetable along the side of the wok. Add 1 tsp of oil in the center of the wok. Crack 2 eggs in the center, cook for 2 minutes until eggs are nearly set.
Add cooked chicken, green beans, gluten-free soy sauce and salt to fried rice. Mix well, taste, adjust seasoning and serve warm.
