Baked Gluten-Free Meatball Recipe…Delicious and Easy to Make

My husband isn’t the greatest cook in the world, but when he does cook one of his favorite dishes is meatloaf and spaghetti. I don’t bake these types of dishes often. But he’s been so busy lately when it came his turn to cook I gave him a break and cooked a big dish of delicious meat balls for dinner, with spaghetti. Of course he loved it.
This is an easy dinner; you can make it in 30 minutes. Here’s my recipe for gluten-free meatballs
1 tablespoon of cooking oil
1 small onion (diced)
1 carrot (peeled and diced)
3 cloves garlic (chopped)
1 lb. organic grass fed ground beef (10% fat)
½ cup parsley (chopped)
1 tablespoon agave
1 tablespoon balsamic vinegar
¾ teaspoon salt
¼ teaspoon black pepper
½ cup of gluten-free breadcrumbs (N-ergy)
¼ cup of gluten-free ketchup
2 tablespoon cornstarch
1. Preheat the over to 350º. Heat up oil in a pan, sauté onion, carrot for 2 minutes until soft, then add garlic for 30 seconds. Set aside.
2. In a bowl – add all the ingredients, then cooked onion, carrot and garlic. Mixed well.
3. Put wax paper on a baking sheet, use a scooper or use hand to form meatball. Lined them up on the baking sheet.
4. Bake meatball for about 20-25 minutes. Check to make sure they are cooked (no pink color in the center) before serving.
